What Makes Bo.lan Special?
Bo.lan has become a global culinary destination for its authentic Thai food. While many of us are used to ‘tourist-friendly’ Thai food – lighter, sweeter, toned down versions of the food – Bo.lan is devoted to serving Thai cuisine the way grandmothers cooked it a century ago. That means ground-from-scratch curry pastes, fresh ingredients sourced from small family-run farms, and cane sugar made in a traditional labour-intensive way. Here’s where slow food really earns its name.
This means bolder spices in multiple dishes served altogether, relishes that provide balance and dishes that showcase a true celebration of Thailand’s culinary heritage. This commitment earned them a feature in Netflix’s Chef’s Table (Season 5, Episode 3).
Beyond flavour, Bo and Dylan are champions of sustainability. Their Bangkok restaurant strives for a zero-carbon footprint with solar panels on the roof, closed loop-composting and minimal use of plastic bottles. Their philosophy blends culinary excellence with a deep respect for culture and the planet

The Mood at Mekong
This time, Bo and Dylan are unleashing their culinary genius at Mekong in Whistler’s Creekside.
Mekong’s décor strikes a balance between modern elegance, Southeast Asian flair, and the warmth one expects in a mountain town. There’s a strong thread of Thai influence throughout – use of lush greenery, warm natural materials, rich textures – mixed with contemporary features so it feels fresh. In fact, if you haven’t ventured to Creekside for modern Southeast Asian fare yet, consider this your invitation.

Taking time to peruse and savour the cocktail list at Mekong is highly recommended! These drinks impress with creativity and balance—so smooth, you may hardly notice their strength.
Take for instance Mekong’s ‘Bad Decisions‘ where Jade Taiwanese Whisky is blended with 5-spice, fresh squeezed lemon juice and shaken with egg whites. If you’re looking for suggestions, Bar Manager Michael Sherriff-Scott will happily guide you.

Personal Connections...
Many may already know Mekong’s culinary director Angus An from his celebrated restaurants in Vancouver. These include Maenam, Sen Pad Thai and Longtail Kitchen. With such a strong presence in the city’s Thai dining scene, An brings both expertise and passion to Whistler’s Mekong – and he couldn’t be more exited about welcoming Bo and Dylan. According to An,

This dinner at Mekong is a rare opportunity to experience the culinary excellence born from long-standing camaraderie across the globe.
I’m especially looking forward to the event, as my friend and former Bearfoot Bistro colleague, Colin Schira, is now the General Manager at Mekong. If you don’t know it, the Bearfoot Bistro is one of Whistler’s most iconic dining rooms, often featured on Canada’s 100 Best Restaurants list. With Colin at the helm, you can be certain the hospitality and service will be absolutely spot on.
Mekong's 150-Bottle Plus Wine List
But that’s not all. Colin has curated a list of more than 150 selections, ranging from playful pairings to world-class treasures. Yes, you’ll find those off-dry Rieslings—like Dr. Loosen’s single-vineyard Ürziger Würzgarten Spätlese—perfectly tuned to balance Thai spice. But the list goes far beyond. Local British Columbia icons such as La Stella’s Maestoso share space with prestige Champagnes, from Taittinger’s Comtes de Champagne 2013 to the ultra-rare Salon 2015.
Not to be outdone by Bo.lan’s commitment to sustainability, the list highlights some organic and sustainably crafted favourites such as Lapierre’s Morgon (France), Fürst from Franken (Germany), and Jermann from Italy.
Mekong’s list goes beyond the delicate selections above to New World heavyweights like Signorello and Macauley of Napa Valley, alongside Old World classics including Rocca della Macie and Argentiera from Tuscany. In short, the list is as adventurous and layered as the cuisine itself.
